Gluten free banana bread

This is the best banana bread you will ever have, if I may say so myself! The texture is just perfect – light and spongy and I love having it with either a bit of butter or just simply on its own! This recipe has a lower sugar content than you would find in other recipes. If you fancy something sweeter, why not add a bit of jam! Here is the recipe – you can thank me later 🙂 Ingredients: 280g buckwheat flour 5 small to medium ripe bananas (in small chunks) 80ml honey (or 80g coconut sugar) 100g melted, cooled down coconut oil 50ml almond milk 1 egg 1/2 tsp cinnamon 1/2 tsp biocarbonate of soda 1 tsp baking powder Preparation: Preheat your oven to about 180 degrees Celsius Use a loaf tin and spread some butter inside Add all ingredients to a food processor and mix until you achieve a smooth dough consistency (I use Thermomix and set it for the bread mix function for about 5-7min) Pour the mixture into the tin …

Matcha oat pancakes

As my obsession with matcha continues I have recently developed a brand new one – pancakes 😉 I started with the simple banana and egg pancakes but then I started adding my own touches to it and so far this recipe I am about to share with you is my absolute favorite <3 Ingredients;  4 tablespoons of rolled oats 1/4 cup of almond milk 1/2 teaspoon of matcha powder 1 egg 1 tablespoon of coconut flour If you would like to add a little bit more sweetness to it I could recommend a ripe banana or half teaspoon of coconut palm sugar 😉 Preparation; Mix together oats and almond milk and leave in the fridge (min 20 minutes) Add rest of the ingredients and fry like normal pancakes (preferably using coconut oil) Tip; When adding matcha powder to the mix, I would recommend to first stir it in with a tiny bit of boiled water so that it mixes nicely with the pancake mix 😉      

Nicer ice cream- nice cream!

As the sun decided to come out today in London my cravings decided to target ice cream… As much as I love Ben&Jerry’s cookie dough I love my thin (ish) waist more so nice cream it is! I don’t think many of you know how easy and delicious these things are and the only way to find out is to make them yourself;)   Ingredients; 2 frozen bananas 1 1/2 teaspoon of almond butter 1/4 cup of coconut water Preparation; Place everything in a blender and mix until smooth (yes, that’s all!;)) Let me know how you like them;) Love, Mags Xx
